Most first-time visitors to Scotland probably think they are well informed about the national dish and drink. Scotland is rightly famous as home to Whiskey and Haggis. In fact, huge amounts of these two specialties are consumed worldwide, 25 January, to celebrate the birth of another famous Scot, Robert Burns.
If pushed, some visitors may appoint another plate of porridge in Scotland. But they could go further? How many foreign visitors could say the name of six Scottish dishes? Many of the natives can push ahead with such an answer, so much of what we eat is so universally acquired and strongly influenced by marketing the TV, the Scottish meal would be a bit 'different from any other part of the United Kingdom, or even much of North America.
But there are some unique flavors of Scotland to await the more adventurous taste buds, if you know where to look. Therefore, for the greedy who seek a truly ethnic dinner in Edinburgh, read on.
Let's start with the positive side, where we produce the healthiest diet. Oats and barley are the cereals for the production of traditional Scottish Agricultural and influence much of our diet.
Oatmeal, for the uninitiated, is simply ground soaked in warm water and served with a pinch of salt. Today, you're so inclined to find porridge with hot milk to give a creamier riding and served with sugar, jam, honey or maple syrup, even.
Oat cakes are another derivative of our agricultural heritage. Milled oats are cooked in small round biscuits and served with salty cheese and other toppings. Variations abound, depending on how the oats were crushed to create rough and smooth textured cakes. Among our favorites are Orkney oatcakes. Being cold and wet Scottish weather conditions hot meal comfort. Soup be just the thing on a cold and wet, is another value in Scotland, the savings. By taking a number of ingredients and adding a good dose of water, meals can be made to go further.
Scotch Broth is a thick broth, thanks to the presence of pearl barley and dried peas. Its main ingredients are lamb's neck, and a selection of those who are at the root, but not potatoes.
Cock-A-Leek includes leeks, and is based on a long slow cooking of an old bird, until the meat is tender and separates from the body, which is removed.
Haggis poor Wee Beastie described by Burns, has been virtually eliminated from Lower Scotland and it is highly unlikely that you see someone on a visit to Edinburgh. Haggis can still be found in the mountains near Glen Coe, but most caught are immediately sent for export to France, where they served in the chic cafes of Paris as "Gigot de Loup".

These, then, are what I would describe rustic diet. All stem from what was available locally and, especially, were cheap. These foods are healthy and wholesome, and because you can also find the menus of restaurants in Edinburgh.
Now we come to what some would call the shame of Scotland. Our love for the fat and sugar, often combined.
One of the most successful companies in Scotland is a bakery called Greig retail bakers. They have branches throughout the UK, but are particularly well represented throughout Scotland. Open from dawn until evening, Greig meet the nation's hunger for fat, salt and sugar. Greig compare a French bakery would be like comparing the National Portrait Gallery to a sex shop in Soho. They sell empanadas, but there are bits of comparison.
The Scottish Pie nothing to do with whiskey. It is a monotonous round of pastry inadequate laundering, filled with mashed potatoes, claiming to contain a kind of sheep. These pies can be purchased hot or cold and are often eaten out of a paper bag. The paper bag is an essential part of the dining experience that is bound to absorb some of the flood of saturated fat that escapes when the cake is bitten.
Scottish Bridie has nothing to do with the sacrament of marriage. From a bakery, this is another form of Scottish cake. In this form the meat must be wrapped in puff pastry. Available hot or cold, will again need a paper bag to absorb the flow of escaping fluid.
Haggis Pies offered some bakeries in the city. It is a mild form of paste layer cake filled with haggis, mashed turnips and potatoes. Paper bag is again necessary.
Haggis and chips are available in most fish and chip shops. Here the Scottish genius comes to mind. Usually, Haggis would disintegrate if it was fried. As is rolled in flour and dipped into the dough before frying can be applied. I'm sure you know how to use? A large paper bag and wrapped in newspaper.

Bannock is a loaf of sweet bread. Has its own structure and is very different from other types of sweet breads like brioche. Original Bannock, Queen Victoria's favorite food, are still in Selkirk. Selkirk Bannock is a sweet company structured, full of dried fruit. It is usually sliced and served with butter.

Ecclefechan Tart is a name with which to impress the locals. From the town of Dumfries Ecclefechan (outside Lockerby), the filling is made with dried fruits, nuts and butter, baked game in question. Butter cookies are a delicious combination of butter, flour and sugar of course. Cut your finger, it is acceptable to support a whiskey.

Barr Irn Brew is made of beams, as advertised. Irn call beer a drink at your own risk, if dare.This soda is also known as "the friend of the dentist," because of the incredible amount of sugar in suspension in the liquid amber. This drink has the authority cola and soft drinks can only marvel cases. As much as a mixer with alcohol favorite, or do the fried Mars bar!
